Mom’s Fresh Apple Cake
(This is very easy, but very likely might be the best apple cake you will ever make. It was passed down from my grandmother.)

2 c. sugar
1 c. oil
3 eggs
3 c. flour
1 tsp soda
1/2 tsp salt
1 tsp vanilla
3 c. diced apples, partially peeled
1 c. nuts

Glaze: 3/4 c. brown sugar, 1/4 c. milk, 1/2 stick margarine, 1 tsp. vanilla

Cream together the sugar and oil for a little while, then add eggs one at a time. In a separate bowl mix the flour, soda, & salt. Add slowly to the sugar mixture. Add the vanilla. When thoroughly mixed, (will be thick), fold in the apples and nuts. Pour into large tube pan, greased, etc., and bake 1&1/2 hr. at 325 degrees, or until done, (toothpick test). Mix glaze together in saucepan and boil 5 min. After taking the cake out of the pan, drizzle with the glaze while cake is still warm. I use a tube pan that has the bottom that lifts out of the sides. This makes it easier to get this cake out of the pan. But you can use anything, even two loaf pans.
