Mexican Salad

This is a complete meal in itself, and low calorie.

3 cups cooked rice
shredded lettuce
1 jar chunky salsa- 8 oz.
1/2 cup shredded white cheese
1 can chili beans, drained
onions, chopped, preferably Vidalia
shredded cheddar cheese
tomatoes (opt.)
tortilla chips
chopped green onions

Spread rice on large platter. Layer on top: shredded lettuce, salsa, white cheese, beans, onions, shredded cheddar cheese on top. May add fresh tomatoes. Garnish with green onions. Tightly cover with plastic wrap. Chill. Serve with tortilla chips. This does not need any other dressing.
