Our Family's Cornbread Recipe

2 cups self rising corn meal mix
1 egg, beaten
1 cup buttermilk, or more, (enough to make mix pourable)

Preheat oven to 400 deg. Before mixing your conrnbread mixture, start your skillet to heating. Heat a medium to large sized skillet, preferably cast iron, on the eye of the stove with several tablespoons oil rubbed around the bottom and sides. (If you really want to go southern here, use bacon grease, left over from bacon you have cooked.)

Heat until very hot then pour your just mixed cornmeal mixture into the skillet and bake in the hot oven until brown, (about 20 minutes).

For a larger family, add up to another cup of corn meal mix and more buttermilk until it is pourable.

 This recipe is very easy and ends up with a delicious crust around the edges.
