Balsamic & Soy Salad Dressing

  2 Tbsp olive oil
  1/4 cup lite soy sauce
  2 or 3 Tbsp balsamic vinegar
  1 tsp roasted garlic -- minced
  1/2 tsp Dijon mustard

Blend all ingredients together and spoon over individual servings of salad. (adjust any item that you need to fit your taste. We like it rather tangy, so I add more of the balsamic vinegar....just be careful to not overdo it.)

NOTE : minced garlic (roasted or regular) purchased in a jar is perfect to use. I have found that the brand "Spice World" makes the best minced garlic. It's found in the produce section of your grocer.

(I like to make a lot of this and store in refrigerator in a jar. However, the olive oil will thicken, so all I do is run it through the microwave for a couple of seconds.)

The following items make a delicious topping for salad:
(use single or mix and match)
  raisins
  unsalted, roasted sunflower seeds
  olives
  grated Romano and/or Parmesan cheese
